POACHED PEARS
6 cups Ocean Spray® Cranberry Juice Cocktail
Combine cranberry juice cocktail and sugar in a large saucepan. Bring to a boil over high heat. Place pears in pan. Cover and simmer on low heat for 10-15 minutes or until pears are tender when pierced with a fork Turn pears several times during cooling. Remove from heat. let cool in liquid at room temperature. Combine cranberry sauce and chocolate chips in a medium saucepan. Melt over medium heat, whisking occasionally until smooth. Remove pears from liquid; drain. To serve, spoon ¼ cup chocolate cranberry sauce on each serving plate. Place pears on plate. Spoon remaining sauce over tops of pears. PUMPKIN BREAD
1 3/4 cups flour
Preheat oven to 350°F. Lightly spray a non-stick 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan with non-stick vegetable spray Combine dry ingredients in a medium mixing bowl. Combine remaining ingredients, except sweetened dried cranberries in a separate mixing bowl. Add to dry ingredients, stirring just until dry ingredients are moist. Stir in sweetened dried cranberries. Spread evenly in loaf pan. Bake 60 to 65 minutes or until a toothpick inserted into the center of the bread comes out clean. Remove from pan. Cool completely on a wire rack. OATMEAL CRANBERRY
2/3 cup butter or margarine, softened
Preheat oven to 375°F. Using an electric mixer; beat butter or margarine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour; baking soda and salt in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in sweetened dried cranberries and white chocolate chunks. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Makes 2½ dozen.
